BUFFALO CHICKEN QUESADILLAS

10 Quesadilla Shells
1 bottle Frank’s RedHot Wing Sauce
1 pound shredded cheddar jack cheese
1 small container bleu cheese crumbles
4 stalks celery, chopped 1 large onion, chopped 1 large green pepper, chopped

Preheat a large skillet on medium-high heat. Using Pam butter, spray one side of the quesadilla, then place this side down in the heated skillet. Starting with one side of the quesadilla, add some shredded cheddar jack cheese, top it with some bleu cheese crumbles, top with few shakes of the Frank’s hot sauce, top with the sliced, grilled chicken. Once all the toppings are on, fold the quesadilla in half. By this time, the cooked-side down should be browned – so flip the quesadilla to cook on the other side.
