Executive Chef Scott Fischer for BRAVO! Cucina Italiana stopped by 69 News at Sunrise to add a little Italian flavor on Friday October 19th.
Fennel, Arugula and Bufala Mozzarella Salad 1 1/2 oz shaved fennel 1 1/2 oz arugula 1/2 oz Tricolore Lettuce Mix 4 balls Mozzarella di Bufala,halved 1/2 oz lemon vinaigrette 1 pinch salt and pepper mix 6 pieces roasted roma tomatoes 1 pinch sea salt 2 turns black pepper, freshly ground 1 Tbsp Bellaviatano Cheese 1 drizzle extra virgin olive oil In a mixing bowl, combine fennel, arugala, tricolore,mozzarella,lemon vinaigrette and salt and pepper. Toss to combine. Pile salad high in the center of a chilled plate. Place tomatoes around the salad. Garnish with sea salt, black pepper, Bellaviatano and olive oil. |
