Natalie Miller from Looper's Grille and Bar in Bethlehem was back in the 69 News kitchen on Friday, September 28 to share with us more recipes from her "Fit Club Challenge."
Chicken-Apple Salad with Apple Cider DressingTo prepare the chicken:
1 ½ pounds boneless, skinless chicken breast 1 cup apple cider 1 Tbsp. butter, melted 1 tsp. cinnamon ½ tsp. Thyme Mix all of the ingredients in a glass baking dish and cover. Bake at 325 for about 25 minutes, or until cooked through. Let cool completely and then chop into cubes. To prepare the dressing:
2 cups apple cider 1/3 cup vegetable oil 3 Tbsp. cider vinegar 1/3 cup light sour cream ½ cup pecans, toasted 2 tsp. chopped parsley 1 tsp. cinnamon Dash of kosher salt Simmer the cider vinegar in a saucepan for about 20 minutes. You want to reduce it by half. Let cool completely. Add the oil to the vinegar until well mixed. Then stir in the rest of the ingredients until just combined. To prepare the salad:
In a large bowl mix: The cubed chicken 2 large or 3 small tart apples (I like Granny Smiths) quartered, cored and sliced 1/3 cup shredded red cabbage 1/3 cup shredded green cabbage Dressing Toss until mixed. Serve well chilled.
Toasted Ravioli with Tomato Basil Salsa
1 bag frozen cheese ravioli ¾ cup bread crumbs 3 Tbsp. grated parmesan cheese 1 tsp. dried basil 1 tsp. dried oregano dash of pepper dash of kosher salt olive oil cooking spray 2 large egg whites Preheat the oven to 375. To prepare the ravioli:
Cook the ravioli according to the package. Rinse with cold water and drain WELL. Spray a large nonstick cookie sheet with the cooking spray. Combine the bread crumbs, parmesan cheese, basil, oregano, salt and pepper in a medium bowl. Beat the egg whites in a shallow bowl until just frothy. Add a few ravioli at a time to the egg whites and then transfer to the bread crumbs. Place on the baking sheet. Repeat this with the remaining raviolis. Spray the tops of the ravioli with the cooking spray. Bake for 13-15 minutes or until crisp. Serve with the salsa. To prepare the salsa:
1 pound tomatoes, seeded ½ cup basil leaves ¼ cup diced red onion 1 Tbsp. balsamic vinegar dash of kosher salt dash of pepper
Fab Faux Cheesecake
1 package Neufchatel cream cheese ½ cup orange marmalade ½ tsp. vanilla extract Whip the cream cheese, marmalade and vanilla until light and fluffy. Serve with fresh fruit to dip --whole strawberries, grapes, apple slices…you choose. |
