Elizabeth Stark from Lehigh Valley Hospital was in the 69 News kitchen on Friday, September 7 to demonstrate what kinds of foods kids can eat to stay alert and perform their best in school.

PB and Apple Toast
1-2 slices whole wheat bread (look for 70 calories per slice)
1 tbs. peanut butter (your choice-we used Crazy Richard’s brand)
1 medium Granny Smith apple-cored and sliced
1 tsp raisins
 
Toast bread and top with peanut butter, apple and a sprinkle of raisins.
 
 
Pizza on a Pita
1 whole wheat pita pocket (4-6” size)
¼ cup pizza sauce
2 oz. part-skim mozzarella
Toppings of your choice (we used broccoli, tomato and turkey pepperoni)
Oregano, basil or parmesan cheese to taste.
 
Preheat oven to 425° and spray a cookie sheet with cooking spray.  Top pita with sauce, cheese, vegetables and pepperoni.  Sprinkle with oregano and parmesan cheese.  Bake pizza for 8-10 minutes or until cheese has melted.  Pizza can be eaten hot or cold!
 
 
Crunchy and Chewy Trail Mix
1 box Grape Nut O’s cereal
1 box Quaker Oatmeal Squares
1 cup dried cranberries
1 cup dried apricots-chopped
1 cup dried apples-chopped
 2 cups almonds
 
Prepare dried fruits by chopping into small pieces.  Empty all cereals into a large bowl with dried fruit pieces and nuts and toss well.  Appropriate portions are 3/4 cup. Guaranteed to give you all the energy you need for the big game!
