Chef Christopher Hunt of Eat with Gladness Catering in Easton prepared Oven Roasted Buffalo Wings and Pasta Salad on 69 News at Sunrise on Friday, May 11.
Oven Roasted Buffalo Wings – Hot/Mild (Serves 3-4) Ingredients: v 2lbs chicken wing pieces (A & B sections) v 2TBSP hot sauce v 3TBSP margarine or butter v Paprika seasoning Wing preparation: v Preheat oven to 450 degrees v Place aluminum foil on a flat surface v Rinse wings under lukewarm water v Place raw wings on the foil and pat dry with paper towels v Season wings with paprika on both sides v Place wings in a regular baking pan (avoid stacking wings on top of each other) v Bake wings for 45 minutes or until golden brown Sauce preparation: v Combine hot sauce and butter/margarine in a small pot on low heat v Occasionally stir the mixture until the sauce and butter/margarine have melted v Remove from heat and let cool Combine sauce and wings: v Once wings are done, remove them from the oven and place them in a medium sized plastic container v Pour sauce into the container with the wings v Place a tight lid on the container and shake, which will allow the wings to be completed coated with sauce Eat with Gladness Pasta Salad (Serves 10-12) Ingredients: v 1 box garden style rotini pasta v 1 cucumber v 1 16 oz bottle zesty Italian dressing v 2 oz sliced black olives v ½ cup sugar v 1 bottle grated parmesan cheese v oregano seasoning v 1 bunch fresh parsley or bottled parsley flakes Preparation: v Boil rotini in a large pot until noodles are soft and done v Cut cucumber into small bite-sized portions v Drain water and cool noodles under cold water for 1 minute (this ensures noodles do not continue to cook even after removed from heat) v Pour rotini in a large mixing bowl v Add 8 to 10 oz of dressing (shake dressing well before using) and stir v Stir in cucumber pieces, sugar, black olives, several shakes of oregano and parsley (fresh or bottled), and parmesan cheese v Lightly cover top of salad with oregano and/or parsley v Finish covering top of salad with parmesan cheese v OPTIONAL: Add more dressing until desired taste |
